Ingredients
Marinara Sauce:
Directions
- Cut the mozzarella into 1/4-inch thick slices large enough to cover two slices of bread. Save the rest of the mozzarella for another recipe. To make 2 sandwiches, top the cheese with the remaining 2 slices of bread and press down to compact.
- Season the eggs, garlic, and parsley with salt and pepper in a mixing bowl. Put the bread crumbs on a plate.
- Pour the oil to a depth of 1/4 inch in a large skillet over medium-high heat. When the oil is hot, dip each sandwich into the egg mixture, dredge in the bread crumbs, and fry until crisp and the cheese has melted, about 3 minutes per side.
- Cut each sandwich in half and serve with the marinara sauce on the side for dipping while still hot.
Marinara Sauce:
- In a saucepan, heat the oil over medium-high heat. Cook, stirring constantly until the garlic is fragrant. Season with salt and pepper to taste after adding the tomatoes and sugar. Bring to a boil, then reduce to low heat and cook for 30 minutes.
- Stir in the basil and parsley after removing the sauce from the heat.
