- 2 Tbsp. Olive Oil
- 6 Cloves Garlic, Minced
- 1 15-Oz. Can Diced Tomatoes
- 1/2 C. Dry White Wine
- 2 Tbsp. Freshly Chopped Parsley, Plus More For Garnish
- Kosher Salt
- Freshly Ground Black Pepper
- 2 Lb. Mussels, Scrubbed And Debearded
- Grilled Bread, For Serving
- 2 Lemons Cut In Wedges
DIRECTIONS
- Add chopped garlic to a pot over medium-low heat. and cook until
fragrant - Stir in the diced tomatoes, wine, and parsley until combined.
- Season with salt, black pepper, and a pinch of crushed red pepper (for a spicy option add a long hot pepper or jalapeno).
- Add mussels, cover, and cook until all shells are open. (Recycle any shells that aren't open.)
- Garnish with additional parsley and serve with grilled bread. as well as a lemon wedge
