Keto Skirt Steak with Salsa Verde
Quick Keto Steak recipe only uses your herb garden or the refrigerator to make this simple sauce that goes quite well with steak or could do chicken!

INGREDIENTS
2 tbs extra virgin olive oil
2 garlic cloves, crushed
4 thyme sprigs, leaves finely chopped
1 rosemary sprig, leaves finely chopped
2 lb skirt steak
Freshly grated horseradish
- SALSA VERDE
- ½ bunch flat-leaf parsley
- ½ bunch basil, leaves picked
- ½ bunch mint, leaves pickled
- ¼ cup (60ml) red wine vinegar
- 4 oz extra virgin olive oil
- 2 oz cornichons
- 2 oz capers
- 2 tsp Dijon mustard
Instructions
Combine the olive oil, garlic, thyme, rosemary, and 1 tsp salt, and freshly ground pepper in a mixing bowl. Spread on top of the steak.
Heat a chargrill pan or barbecue until smoking. Cook the steak for 3-4 minutes per side for medium-rare. Rest for 5 minutes, lightly covered with foil.
In the meantime, make the salsa Verde by combining all of the ingredients in a small food processor, seasoning, and whizzing to a rough paste.
Serve the sliced steak with the salsa verde. Garnish with freshly grated horseradish.
