Keto Zucchini Alfredo This creamy low-carb zoodles dish is a dinner winner, ready in 10 minutes with only few ingredients.
Ingredients

- 1 tbsp extra virgin olive oil
- 5oz butter
- 1 lb zoodles
- 2 garlic cloves, finely chopped
- 4oz cream cheese, chopped
- 1 tbsp thickened cream
- (1/4 cup) finely grated parmesan, (or vegetarian hard cheese) plus extra to serve
- kosher Salt
- Ground Black Pepper
In a frying pan, heat the oil and butter over medium-high heat until the butter foams. Mix in the zucchini noodles. Toss with tongs every 1-2 minutes, or until slightly wilted. Transfer to a plate with tongs.
Place the garlic cloves in the pan. Cook, stirring constantly, for 1 minute, or until aromatic. Combine the cream cheese, cream, and (1/4 cup) water in a mixing bowl. Turn down the heat to low. Cook for 3 minutes, stirring frequently, or until the mixture is smooth. Season with salt and pepper after stirring in the parmesan. Toss in the zucchini with tongs to combine. Serve with additional parmesan.
